- 2 lb. fresh peas, cooked
- 1/2 lb. small white onions, boiled
- 1/2 c. finely shredded lettuce
- 2 Tbsp. butter
- 1 tsp. flour
- salt and pepper to taste
- sugar to taste
Directions

1Cook the peas lightly (about 15 minutes).

2Add onions, lettuce and 1/3 cup of liquid in which the peas were cooked.

3Cream butter with flour; add to peas.

4Reheat to boiling, stirring gently. Season to taste.

5A pinch of fresh or dried chervil may be added. Serves 4.
