- 1/2 cucumber
- 1 carrot
- 1 lemon, juice of
- salt and pepper
Directions

1Thinly slice the onions and tomatoes and place in a bowl.

2Peel and thinly slice cucumber and carrot. Place in bowl with onions and tomatoes.

3Slice the chili lengthways, discard the seeds, and finely chop. Add to other vegetables.

4Squeeze lemon juice over the salad. Season with salt and freshly ground pepper and toss to mix.

5Serve as a relish or salad.
