Ingredients

  • 1 small cucumber (or half a normal one)
  • 3 tomatoes
  • 1 salad onion
  • 1 green chile
  • 1 bunch fresh coriander
  • 1 lemon

Directions

    Chop the onion, cucumber and coriander and put them in a bowl.

    If you are using chile, seed and chop it and add too

    Plunge the tomatoes in boiling water for 30 seconds to loosen the skin
  4. 4
    While they are in the water squeese the lemon juice over the other ingredients
  5. 5
    Peel the tomatoes with your fingers and chop (usually kachumber recipes recommend seeding the tomatoes, but I never do)

    Add the tomatoes to the salad.

    Stir well, add salt and pepper, stir again and leave to sit for half an hour before serving.
