Ingredients
- 1 small cucumber (or half a normal one)
- 3 tomatoes
- 1 salad onion
- 1 green chile
- 1 bunch fresh coriander
- 1 lemon
Directions

1Chop the onion, cucumber and coriander and put them in a bowl.

2If you are using chile, seed and chop it and add too

3Plunge the tomatoes in boiling water for 30 seconds to loosen the skin

4While they are in the water squeese the lemon juice over the other ingredients

5Peel the tomatoes with your fingers and chop (usually kachumber recipes recommend seeding the tomatoes, but I never do)

6Add the tomatoes to the salad.

7Stir well, add salt and pepper, stir again and leave to sit for half an hour before serving.

8Enjoy!
