Kale Soup

  • big bunch fresh kale, cleaned well
  • 1/2 stick butter or margarine
  • 1 large pkg. linguica, cut in small slices
  • 4 or 5 medium potatoes, peeled and cut in chunks
  • 1 can kidney (red) beans
  • 1/2 head cabbage, cut (if desired)
  • salt and pepper

Directions

    Melt butter or margarine in large pot.

    Add linguica and fry up, then add half pot of water.
  3. 3
    Add potatoes; cook on high heat until boiling, then add beans, cabbage, kale, salt and pepper.

    Add some ketchup for color.

    Cook on medium heat until potatoes and soup are done, about 20 minutes, then turn to low and simmer.
