Ingredients
- 1 large onion
- 2 tsp. vegetable oil
- 1 large potato, cubed
- 2 (15 1/2 oz.) cans red kidney beans
- 16 oz. can chopped kale with liquid or equivalent amount of fresh or frozen
- 3 c. water
- 16 oz. can tomatoes or fresh
- 1/4 c. vinegar
- 1 Tbsp. liquid smoke
- hot pepper sauce to taste
- 1/2 tsp. crushed garlic
- 2 large carrots, sliced
Directions

1Saute onion and garlic in oil; add carrots, potatoes, water and kidney beans.

2Add tomatoes and juice; add kale and let simmer for about 45 minutes, until carrots and potatoes are soft.

3Add vinegar, liquid smoke and hot pepper sauce.

4May substitute spinach for kale.
