- 1 lb. raw spinach
- 1 to 2 clove garlic, chopped
- 2 tbsp. olive oil
- Salt and pepper, to taste
Directions

1My favorite thing to do with spinach is to wash it very well; but NOT drain it.

2Meanwhile, heat olive oil in a skillet and toss in a clove or two of chopped garlic.

3Heat the olive oil until the garlic is fragrant.

4Toss in the spinach along with whatever water clings to the leaves.

5Cover the pot; and shake well.

6Continue cooking/shaking until the spinach is JUST wilted.

7Add salt and pepper.

8Serve.
