  • 1 lb. raw spinach
  • 1 to 2 clove garlic, chopped
  • 2 tbsp. olive oil
  • Salt and pepper, to taste

Directions

    My favorite thing to do with spinach is to wash it very well; but NOT drain it.

    Meanwhile, heat olive oil in a skillet and toss in a clove or two of chopped garlic.

    Heat the olive oil until the garlic is fragrant.

    Toss in the spinach along with whatever water clings to the leaves.

    Cover the pot; and shake well.
  6. 6
    Continue cooking/shaking until the spinach is JUST wilted.

    Add salt and pepper.
  8. 8
    Serve.
