- 6 boneless skinless chicken breasts, flattened
- 1/2 cup key lime juice
- 3 garlic cloves, minced
- 1 inch ginger, minced
- 1 cup flour
- 1 1/2 teaspoons ground ginger
- 1 1/2 teaspoons garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 1 cup vegetable oil (for frying)
- 1 cup chicken broth
- 3 teaspoons lightly packed brown sugar
Directions

1Marinate chicken in a glass dish with the key lime juice, fresh garlic and ginger-cover and let stand 2 hours turning once.

2Remove chicken and reserve marinade.

3Mix flour, ground ginger, garlic, salt and pepper.

4Heat oil over med-high.

5Dredge chicken in flour mixture and brown in oil.

6Transfer to a 9x13 casserole dish.

7Pour reserved marinade over chicken along with the broth.

8Sprinkle brown sugar on top and bake for 30 minutes in a 375° oven.

9Do not let broth totally evaporate.

10Remove to a serving platter and pour remaining broth over chicken.
