- 2 whole Eggs
- 3/4 cups Granulated Sugar
- 7 whole Key Limes, Juiced And Zested (about 1/2 Cup Of Juice)
- 6 Tablespoons Salted Butter
Directions

1In a pot, whisk the eggs, sugar, and zest until pale in color, about 3 minutes. Pour in key lime juice. Over medium-low heat, whisk constantly until thick, about 5 minutes.

2Stir butter in 1 tablespoon at a time. When well combined, remove from heat. Strain into a bowl and cover with plastic wrap. Be sure the plastic wrap touches the surface of the curd. Cool in fridge for 2 hours.

3Scoop over ice cream or scones and enjoy!
