- 1 pkg. (3 oz.) lime gelatin
- 1 c. boiling water
- 1 to 2 tsp. grated lime rind
- 1/2 c. lime juice
- 1 egg yolk, well beaten
- 1 can sweetened condensed milk (14 oz.)
- 1 tsp. Angostura Bitters
- 1 egg white
- few drops green food coloring
- 1 baked (9-inch) pie shell, cooled
Directions

1Dissolve gelatin in boiling water; add lime rind and juice and pour slowly into beaten egg yolk, stirring continually.

2Add condensed milk and Bitters and chill until slightly thickened. Stir to avoid gelatin settling on bottom of bowl.

3Beat egg white until stiff peaks form.

4Fold into gelatin mixture.

5Add food coloring.

6Pour into pie shell and chill until firm (about 3 hours).

7Garnish with whipped cream or whipped topping and lime slices if desired.
