Kidney Bean Sauce

Ingredients
- 1 lb. dry kidney beans
- 1 can tomato paste (small)
- 1 can tomato sauce (small)
- 3 onions, chopped
- 4 cloves garlic, minced
- 1 small green pepper, chopped
- 3 Tbsp. oil
- 1/2 tsp. thyme
- 4 c. water
- pinch of sugar (optional)
Directions

1Wash and soak beans overnight.

2In a medium size pot, add 4 cups water, oil, onion, garlic and salt.

3Mix in a bowl the tomato paste, tomato sauce and 1/2 cup water until smooth.

4Add to other ingredients that are in pot and cook under flame, about 1 1/2 hours, until beans are tender.

5Cut up green pepper and thyme.

6Let simmer in the pot.

7Add a pinch of sugar, if desired.

8When done, serve over rice.
