- 1 cup Dry Pancake Mix
- 3/4 cups Carbonated Water (the Fizz Is Important)
- 3/4 pounds, 2-18 ounces, weight Haddock, Cut Into Pieces
- 2 Tablespoons Flour
- 1 dash Salt
- 1 dash Pepper
- Oil, Enough To Fill Your Deep Fryer Or Skillet For Deep Frying

1Preheat your oil, I used a deep fryer at the highest temperature.

2Any oil is fine.

3Mix up your pancake batter ahead of time.

4I used 1 cup of dry pancake mix to 3/4 cup Perrier.

5Set aside.

6Cut the haddock into pieces.

7Set aside.

8In a bowl mix flour, salt and pepper.

9Dredge your fish in the flour mixture.

10It only needs a light coating.

11Dip fish into pancake batter and shake off excess.

12Drop the fish into the hot oil and cook until golden brown.

13Should take about 4 to 6 minutes.

14Drain the finished fish on paper towels, repeat with the remaining fish.

15Then serve.
