  • 1 cup Dry Pancake Mix
  • 3/4 cups Carbonated Water (the Fizz Is Important)
  • 3/4 pounds, 2-18 ounces, weight Haddock, Cut Into Pieces
  • 2 Tablespoons Flour
  • 1 dash Salt
  • 1 dash Pepper
  • Oil, Enough To Fill Your Deep Fryer Or Skillet For Deep Frying

    Preheat your oil, I used a deep fryer at the highest temperature.

    Any oil is fine.

    Mix up your pancake batter ahead of time.

    I used 1 cup of dry pancake mix to 3/4 cup Perrier.

    Set aside.

    Cut the haddock into pieces.

    Set aside.

    In a bowl mix flour, salt and pepper.

    Dredge your fish in the flour mixture.

    It only needs a light coating.

    Dip fish into pancake batter and shake off excess.

    Drop the fish into the hot oil and cook until golden brown.

    Should take about 4 to 6 minutes.

    Drain the finished fish on paper towels, repeat with the remaining fish.

    Then serve.
