- 2 eggs
- 1/2 cup sugar
- 1/4 cup oil
- 4 large very ripe kiwi, mashed
- 1/4 teaspoon vanilla
- 1 tablespoon lemon juice
- 3 cups flour
- 1 1/2 teaspoons salt
- 3 teaspoons baking powder
- 1 1/2 teaspoons baking soda
Directions

1Preheat oven to 350°F grease 12 count muffin pan.

2Blend the eggs, sugar and oil. Then add kiwi, vanilla and lemon juice.

3In a seperate bowl combine flour, salt, baking powder and baking soda. Mix well, then fold into the wet ingredients.

4Fill muffins cup and bake for 25-30 minutes.
