Kofta Couscous

  • 1/2 cup couscous
  • 1 tsp butter
  • 3 None cooked lamb koftas or meatballs, broken into small pieces
  • 1 1/2 tbsp shelled pistachios, chopped
  • None None Handful fresh mint leaves, chopped
  • 1 None green onion, sliced
  • 1 tsp finely chopped red chili pepper (optional)
  • None None Tzatziki, to serve

Directions

    Place couscous in bowl with butter and season with sea salt and black pepper. Add 2/3 boiling water. Cover with plastic wrap. Let stand for 3 mins, or until liquid has been absorbed.

    Fluff couscous with fork. Add kofta pieces, pistachios, mint, onion and chili pepper. Toss together. Serve hot or cold with tzatziki.
