Labrador Lasagna Bake

- 6 to 8 lasagna noodles, cooked
- 1 cup nonfat cottage cheese
- 1 cup spinach, chopped, cooked and well-drained
- 1 1/2 cups skim milk
- 2 tablespoons flour
- 1/4 cup chopped tomato
- Parsley, oregano, garlic (optional)
Directions

1Preheat oven to 350 degrees.

2In a bowl combine cottage cheese and spinach.

3Take each lasagna noodle and place 2 teaspoons of mixture at one end, then roll up.

4Place in an 8 by 8-inch baking pan that has been sprayed with a non-stick cooking spray.

5Continue until all are rolled up.

6Set aside.

7Mix the flour and milk in a small covered container and shake until blended.

8Place in a small saucepan over medium heat and stir constantly until slightly thickened.

9Add chopped tomato and pour over noodles.

10Garnish the top with parsley or oregano and minced garlic if desired.

11Bake at 350 degrees for 20 minutes
