  • 1 large onion
  • 1 Tbsp. olive oil
  • 1 (28 oz.) can crushed tomatoes in puree
  • 2 tsp. minced garlic
  • 1 tsp. basil
  • 1 tsp. oregano
  • 2 Tbsp. grated Romano or Parmesan cheese
  • 12 oz. to 1 lb. mini lasagna (mafalda), cooked and drained
  • 1 1/4 c. nonfat Ricotta cheese
  • 1/2 c. shredded nonfat Mozzarella

    Cook onion in oil.

    Add tomatoes, garlic, basil and oregano. Simmer, uncovered, for 7 to 8 minutes.

    Remove from heat.

    Stir in the Romano cheese.

    Spoon hot pasta on plate.

    Top with tomato sauce, 1/4 Ricotta cheese and 1 1/2 tablespoons Mozzarella.
