Ingredients
- 1 large onion
- 1 Tbsp. olive oil
- 1 (28 oz.) can crushed tomatoes in puree
- 2 tsp. minced garlic
- 1 tsp. basil
- 1 tsp. oregano
- 2 Tbsp. grated Romano or Parmesan cheese
- 12 oz. to 1 lb. mini lasagna (mafalda), cooked and drained
- 1 1/4 c. nonfat Ricotta cheese
- 1/2 c. shredded nonfat Mozzarella
Directions

1Cook onion in oil.

2Add tomatoes, garlic, basil and oregano. Simmer, uncovered, for 7 to 8 minutes.

3Remove from heat.

4Stir in the Romano cheese.

5Spoon hot pasta on plate.

6Top with tomato sauce, 1/4 Ricotta cheese and 1 1/2 tablespoons Mozzarella.
