Lamb Curry

Ingredients
- 500 grams lamb neck
- 2 tablespoons olive oil
- 2 each garlic cloves mashed
- 1 teaspoon ginger
- 1 tablespoon curry powder
- 1/4 teaspoon cayenne pepper
- 2 each onions chopped
- 2 each tomatoes diced
- 2 each potatoes peeled and diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup coriander finely chopped leaves
Directions

1Heat the olive oil in a large stew pan, fry the chopped onion garlic and ginger.

2Reduce the heat and add the curry powder and gently fry for 1 min.

3Add the lamb neck pieces and fry turning the meat to make sure it is covered with the curry mix on both sides.

4Add the salt and pepper.

5Mix in the diced tomatoes, cover the pot and let it simmer for 30 min.

6Add a little water if too dry.

7(I found that if the heat is just right you don't need to add water) Add the diced potatoes and let it simmer until the potatoes are fully cooked.

8Again, add just a little water if needed, but the water from the potatoes is enough if the heat is right.

9Do not stir the pot after you added the potatoes.

10Once cooked, stir in the chopped coriander and serve.
