Lamb Flatbreads

Ingredients

  • 1 tbsp oil
  • 1 lb ground lamb
  • 2 tsp sesame seeds
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp red pepper flakes
  • 1/2 tsp honey
  • 6 None small flatbreads or pita, lightly toasted
  • 1 cup hummus
  • None None FOR THE SALAD
  • 2 oz arugula
  • 1/2 cup fresh mint leaves, chopped
  • 1 None tomato, chopped
  • 1 tbsp olive oil

Directions

    Heat oil in a large skillet on high heat. Brown ground lamb for 4-5 mins, breaking up lumps. Stir in seeds and spices and cook for 1-2 mins, until seeds are toasted. Add honey and cook for 30 seconds. Remove from heat and season to taste.

    For the salad, combine all ingredients in a bowl. Season to taste.

    Spread flatbreads with hummus. Cover evenly with lamb mixture, then top with a handful of salad to serve.
