- 3/4 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- 1 lb boneless lamb
- 1/2 teaspoon olive oil
- 8 slices bread
- 4 teaspoons garlic spread
- 1 cup red onion, slivers
- 2 tomatoes, sliced thin
- 2 cups spinach
Directions

1Preheat oven to 400 degrees F.

2Remove all visible fat from lamb.

3Combine seasoning (black pepper - salt) in a small cup or bowl.

4Rub lamb with oil then rub with the seasoning mixture.

5Place lamb in a baking dish and roast for 30-40 minutes or until done (med rare).

6Let lamb stand for 10 minutes before slicing.

7Make 4 sandwiches with thinly sliced lamb and the remaining ingredients (bread - spinach).
