Ingredients

  • 1 tablespoon butter
  • 1 tablespoon oil
  • 2 teaspoons Madras curry powder
  • 4 lamb shanks
  • 1 onion, finely chopped
  • 2 cups chicken stock
  • 3 carrots, cut into chunks
  • 2 potatoes, cut into quarters
  • 1 tablespoon fruit chutney
  • 2 cups green peas, cooked
  • parsley, chopped, to garnish

Directions

    Heat butter, oil & curry powder in a heavy pan & slowly brown lamb shanks on all sides.

    Add onion, stock, carrots & potatoes.

    Bring to the boil, then cover & simmer for 1 hour or until shanks are tender.

    Stir in fruit chutney & peas and heat through, add salt & pepper to taste and sprinkle with parsley to serve.
