- 1 tablespoon butter
- 1 tablespoon oil
- 2 teaspoons Madras curry powder
- 4 lamb shanks
- 1 onion, finely chopped
- 2 cups chicken stock
- 3 carrots, cut into chunks
- 2 potatoes, cut into quarters
- 1 tablespoon fruit chutney
- 2 cups green peas, cooked
- parsley, chopped, to garnish
Directions

1Heat butter, oil & curry powder in a heavy pan & slowly brown lamb shanks on all sides.

2Add onion, stock, carrots & potatoes.

3Bring to the boil, then cover & simmer for 1 hour or until shanks are tender.

4Stir in fruit chutney & peas and heat through, add salt & pepper to taste and sprinkle with parsley to serve.
