Lamb with Spinach

Ingredients
- 2 lb. lamb, cut into lg. cubes
- 1-1/2 lb. spinach, washed
- 1 onion, finely chopped
- 2 cloves garlic, chopped
- 2 tbsp. tomato puree
- 1 cup red wine
- 1 tsp. sugar
- 1 tsp. ground cinnamon
Directions

1Fry lamb in a little olive oil until browned.

2Add the onion and fry that for a few minutes then add the garlic and fry until softened.

3Mix in the tomato puree, add the wine, sugar and cinnamon.

4Mix very well, cover the meat with hot water or vegetable stock, cover and simmer for one hour.

5Add the spinach, season well with salt and pepper.

6Add the juice of one lemon and cook for 5 minutes.

7Add in some fresh chopped parsley (flat leaf) and serve with rice.
