  • 5 boxes chopped spinach, drained
  • 1 1/2 c. rice, partially cooked
  • 1/2 c. half and half or milk
  • 4 cloves pressed garlic
  • 1/4 lb. butter or margarine, melted
  • 1/2 c. bread crumbs
  • 1 Tbsp. salt
  • 5 beaten eggs
  • 3/4 c. grated Parmesan cheese
  • 1/4 c. olive oil

Directions

    Beat eggs; fold in all other ingredients.

    Place olive oil on bottom of pan.

    Sprinkle with 1/4 cup bread crumbs.

    Pour mixture on top of bread crumbs.

    Sprinkle remaining bread crumbs on top. Bake in a preheated 350° oven for 45 minutes to 1 hour or until golden brown on the bottom.
