Ingredients

  • 2 Tbsp. salad oil
  • 1 clove garlic, minced
  • 1 (1 lb.) can tomatoes
  • 1 tsp. salt
  • 1/4 tsp. basil
  • 2 tsp. sugar
  • 2 eggs
  • 1/4 lb. mozzarella cheese, cut in thin slices
  • 1/2 c. finely chopped onion
  • 1 lb. ground beef
  • 1 (6 oz.) can tomato sauce
  • 1/3 tsp. pepper
  • 1/2 tsp. oregano
  • 9 lasagna noodles (cooked to pkg. directions)
  • 1 lb. ricotta cheese
  • 1/4 c. grated Parmesan cheese

Directions

    Heat oil in skillet, add onion and garlic.

    Cook until onion and garlic are tender but not browned.

    Add ground beef and cook slowly, stirring occasionally until beef loses red color.

    Add tomatoes, tomato sauce, seasonings and sugar.

    Simmer uncovered for 30 minutes or until sauce is thick but not dry.

    Cook noodles according to directions on package.

    In separate bowl, beat eggs, blend in ricotta cheese.

    In a greased 2 quart casserole, layer half of meat sauce, 3 lasagna noodles, half of ricotta cheese and half of mozzarella cheese.

    Repeat layers of noodles, ricotta and mozzarella cheese.

    Sprinkle on parmesan cheese.

    Bake at 350° until bubbly and golden, about 35 to 40 minutes.
