Ingredients

  • 1 lb lean ground beef
  • 1 (16 oz) can tomatoes
  • 1 (12 oz) can tomato paste
  • 1 tomato paste can of water
  • 1 Tbsp basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 Tbsp dried parsley
  • 1/4 tsp minced dried garlic
  • 2 eggs
  • 3 cups small curd cottage cheese
  • 1/2 cup Parmesan cheese
  • 1 lb sliced mozzarella cheese
  • 1 box large lasagna noodles

Directions

    Brown ground beef and drain; add tomatoes, tomato paste, basil, salt, garlic and water, and simmer for 30 minutes.

    In bowl, beat eggs; add cottage cheese, parmesan cheese, parsley and black pepper.

    Cook noodles according to directions on box, drain and rinse.

    In large (9x13-inch) glass baking dish layer noodles, cottage cheese mixture, mozzarella, then meat sauce.

    Repeat the layers and sprinkle with additional parmedan cheese, if desired. Bake at 375° for about 30 minutes, or until bubbly.

    Let sit for at least 15 minutes before serving.
