Ingredients

  • 1 packages lasagna noodles
  • 1 1/2 packages pancietta (basically diced bacon-found in coolers by deli)
  • 1 packages frozen spinach, thawed
  • 1 8 oz ricotta
  • 1 egg
  • 1 small diced onion
  • 1 tsp minced garlic
  • 1 tbsp olive oil
  • 1 pinch each season salt and black pepper
  • 1 1/2 jars of your favorite spaghetti sauce (I use Prego)
  • 1 packages shredded four cheese blend

Directions

    Preheat oven @ 400 .

    Saute pancietta, onion & garlic in 1 tbsp olive oil.

    Set aside when done.

    Boil noodles as directed & let cool.

    Mix ricotta and egg, first, then add all ingredients together, except noodles.

    Then take 1 noodle & spread mixture from end to end.

    Take one end & roll it up.

    Place in greased 13x9in pan seam side down.

    Repeat.

    When finished, pour spaghetti sauce on top, then shredded cheese.

    Cover with foil & bake for 40 minutes then serve with salad and garlic bread.
