- 1 onion
- 1 lb. baking potatoes (2 or 3)
- 1 egg
- 3 T. flour
- salt and pepper
- oil
Directions

1Grate onion.

2Peel potatoes and grate them.

3Combine onion and potatoes; rinse, and drain in a sieve; squeeze out excess liquid. Put in a bowl and stir in egg, flour, 1/2 tsp. salt and 1 T. pepper.

4Heat about 1/4-inch of oil in a large frying pan.

5Drop about 2 T. batter making several pancakes at a time.

6Cook until golden brown, 4 to 5 minutes a side.

7Drain on paper towels.
