- 3 lb. potatoes, peeled and grated
- 1 onion, peeled and grated
- 1 large egg, slightly beaten
- 2 Tbsp. all-purpose flour
- salt
- pepper
- oil
Directions

1Mix ingredients together except oil.

2In skillet, fill with 1/4 inch oil and heat.

3Drop potato mixture 1 tablespoon at a time into oil and flatten with spatula.

4Fry Latkes for 2 minutes.

5Turn over and fry until brown.

6Serve while warm.
