  • 2 1/2 lb. chuck rib of beef
  • 1 can peas
  • 1 large carrot
  • 1 onion, chopped fine
  • 1 tsp. vinegar
  • 1 Tbsp. bread crumbs
  • 1 Tbsp. tapioca
  • salt
  • cloves

Directions

    Set roast out in room temperature for 1 hour before cooking. Preheat oven to 375°.

    Rub meat well with salt and sprinkle with pepper.

    Place meat, fat side up, in shallow roasting pan. Do not cover; do not add water.

    Put roast in oven.

    Cook just 1 hour. Turn off heat, but do not open door at any time until ready to serve.

    Regardless of the length of time meat has been in the oven, reset temperature to 375° and cook 30 to 40 minutes before serving.

    Open oven door and remove roast to serving platter. Meat will be brown on out side, medium-rare inside.
