  • 3 c. cooked squash (yellow or zucchini), drained
  • 2 Tbsp. grated onion, gently sauteed
  • 1/2 c. milk
  • 1 egg
  • 1/2 c. bread crumbs
  • 1/2 c. grated cheese
  • salt
  • cracked or freshly ground pepper
  • butter

Directions

    Combine onion and squash.

    Salt and pepper to taste.

    Add beaten egg and milk.

    Put half of squash mixture in casserole. Sprinkle half of crumbs and half of cheese over.

    Add rest of squash mixture, rest of crumbs and rest of cheese.

    Dot with butter.

    Bake at 350° for 30 minutes.
