- 8 egg yolks
- 1 c. sugar
- 2 c. fresh milk
- 1 lemon rind or vanilla (for flavoring)
- 3/4 brown sugar
Directions

1Dissolve brown sugar in 1/4 cup water and cook over moderate heat until the sugar browns.

2Line a suitable mold with the mixture evenly and set aside.

3Scald milk in double boiler for 15 minutes.

4Blend the egg yolks with the sugar, milk and flavoring. Pour into the mold lined with caramelized sugar.

5Place this in a bigger pan half filled with water and bake until mixture becomes firm.

6Cool before removing from mold.
