  • 1-1/2 cups all purpose flour
  • 2/3 cup confectioner's sugar
  • 3/4 cup butter or margarine, softened
  • 3 eggs, lightly beaten
  • 1-1/2 cups caster sugar
  • 3 tablespoons all-purpose flour
  • 1/4 cup lemon juice
  • zest of 1 lemon
  • Additional confectioner's sugar

Directions

    Combine flour,confectioners sugar and butter;pat into a greased 13-in.x9in.x2in. baking pan.Bake at 350 for 20 minutes.Meanwhile, in a bowl, whisk eggs, sugar, flour, lemon juice and lemon zest until frothy, then pour over the hot crust.

    Bake at 350 for 20-25 mins or until light golden brown. Cool on a wire rack. Dust with confectioners sugar. Cut into 2in.x2in. squares.
