- 4 large eggs
- 1 1/2 cups granulated sugar
- 3/4 cup fresh lemon juice
- 1/3 cup all-purpose flour
- hotshortbread base
- 3 tablespoons confectioners' sugar
Directions

1Preheat oven to 350F.

2In a bowl whisk together eggs and granulated sugar until combined well and stir in lemon juice and flour.

3Pour lemon mixture over hot shortbread.

4Reduce oven temperature to 300F.

5and bake confection in middle of oven until set, about 30 minutes.

6Cool completely in pan and cut into 24 bars.

7Bar cookies keep, covered and chilled, 3 days.

8Sift confectioners' sugar over bars before serving.
