- 1 c. butter
- 1/2 c. confectioners sugar plus 1 1/2 Tbsp.
- 2 1/4 c. all-purpose flour
- 4 large eggs
- 1 c. granulated sugar
- 1/4 c. grated lemon peel
- 6 Tbsp. lemon juice
Directions

1Heat oven to 350°.

2Grease and flour a baking pan.

3In a bowl beat butter until creamy.

4Beat in 1/2 cup confectioners sugar and then work in 2 cups flour to make a smooth dough.

5Press dough in an even layer in the prepared pan.

6Bake 15 minutes until slightly puffed.

7Next, beat eggs in a bowl with a wire whisk.

8Beat in granulated sugar, lemon peel and juice.

9Sift remaining 1/4 cup flour over egg mixture and stir in.

10Prick top of crust with a fork about an inch away from each other all over.

11Pour egg mixture over crust and bake 30 minutes until egg mixture is set. Remove from oven.

12Cool and sprinkle top with 1 1/2 tablespoons confectioners sugar.
