- vanilla wafers, crushed
- 1 (3 oz.) lemon gelatin
- 1 1/4 c. boiling water
- 3 lemons, squeezed and 1/2 tsp. peel
- 1/2 c. sugar
- 1 large can evaporated milk, chilled
Directions

1Place wafers in bottom of a 9 x 13-inch dish.

2Combine gelatin and boiling water and lemon juice, peel and sugar.

3Place in refrigerator until it starts to set.

4Whip evaporated milk until thick and fold into gelatin mixture.

5Pour over crushed wafers. Sprinkle a few crumbs on top.

6Let chill.

7Yields approximately 14 pieces.
