Lemon Bisque

- 3 ounces gelatin, flavored lemon
- 1 1/4 cups water boiling
- 1/2 cup lemon juice
- 1 x lemon zest from one lemon
- 1/4 cup sugar
- 1 each milk, sweetened condensed 14 ounce can, partially frozen
- 2 teaspoons margarine or butter, melted
- 1/2 cup graham cracker crumbs fine
Directions

1Dissolve the gelatin in boiling water; add the lemon juice, peel and sugar.

2Chill until thickened, but still soft.

3Pour the mixture into a large bowl, add the condensed milk and beat with an electric mixer until smooth and thick.

4Brush the melted margarine or butter over a 7-by-11-inch pan and coat with some of the graham cracker crumbs.

5Pour the lemon mixture into the pan and sprinkle the top with more crumbs.

6Chill thoroughly before serving.
