- 1 1/2 c. cake flour
- 1/2 c. margarine
- 1 1/4 c. sugar
- 2 eggs, well beaten
- 1/2 c. milk
- 1 lemon (juice and rind)
- 1/2 tsp. salt
- 1 tsp. baking powder
Directions

1Cream margarine and sugar (1 cup).

2Add eggs and mix well. Sift flour, salt and baking powder.

3Add to creamed mixture alternately with milk in few additions.

4Stir in lemon rind.

5Bake in well-greased loaf pan at 350° for 45 minutes to 1 hour.

6Have the lemon juice and 1/4 cup sugar ready.

7Mix well and pour over loaf when taken from the oven.

8Let bread cool in pan before serving.

9Makes several servings.
