  • 1 (9-inch) unbaked pie crust (deep-dish)
  • 1 1/2 c. sugar
  • 1/2 c. butter, softened
  • 3 eggs
  • 1 c. buttermilk
  • 1 Tbsp. cornstarch
  • 1 Tbsp. fresh lemon juice
  • 1/8 tsp. salt

Directions

    Heat oven to 350°. Beat sugar and butter until creamy. Add eggs, 1 at a time, beating well after each addition. Add buttermilk, cornstarch, lemon juice and salt; mix well. Pour filling into crust. Bake 55 to 60 minutes or until done.
