- 1 lb. butter or margarine
- 2 c. sugar
- 4 c. flour, sifted
- 6 eggs, separated
- 2 tsp. baking powder
- 1 tsp. salt
- 2 oz. Lemon extract
- 1 box (1 lb.) white raisins
- 1 lb. shelled pecans, whole
Directions

1Cream butter and sugar together.

2Add eggs yolks.

3Combine sifted flour, salt and baking powder together. Gradually add flour mixture and lemon extract alternately to butter mixture until all flour and extract is used up.

4Add raisins and nuts.

5Beat eggs white until stiff. Fold into batter.

6Bake in large angel food pan or 2 loaf pans.

7Bake 1 hour and 15-30 minutes at 300°.
