  • 5 large potatoes, cooked with skins on in salt
  • 1/4 lb. Cheddar cheese, cubed
  • 1 medium onion, diced
  • 1/2 green pepper, diced
  • 1/2 c. chopped fresh parsley or 3 Tbsp. parsley flakes
  • 1/2 slice bread, cubed
  • 1/2 c. melted butter
  • 1/2 c. milk
  • 1/2 c. crushed cornflakes

Directions

    Chop and mix first 6 ingredients and place in casserole.

    Pour butter and milk over top.

    Put cornflakes on top.

    Bake for 1/2 hour at 400°.
