- 2 c. sugar
- 1 Tbsp. all-purpose flour
- 1 Tbsp. cornmeal
- pinch of salt
- 1/4 c. melted butter or margarine
- 1/4 c. milk
- juice and grated rind of 2 lemons
- 4 eggs, beaten
- 1 (9-inch) unbaked pie shell
Directions

1Combine sugar, flour, cornmeal and salt; mix well.

2Add butter and milk, mixing well.

3Add lemon juice, lemon rind and eggs; beat well.

4Broil unbaked pie shell 1 minute.

5Remove from oven and pour in filling.

6Bake at 350° for 30 to 35 minutes or until slightly firm in the center.
