- 1 1/2 c. sugar
- 1 Tbsp. flour
- 1 Tbsp. cornmeal
- 4 unbeaten eggs
- 1/4 c. melted butter
- 1/4 c. milk
- 1/4 c. lemon juice
- pinch of salt
- 1 (9-inch) unbaked pie crust
Directions

1Mix sugar, flour and cornmeal together with a fork.

2Beat eggs, butter, lemon juice and a pinch of salt.

3Add dry ingredients and beat until smooth.

4Pour into pie shell.

5Bake at 300° for 10 minutes, then at 350° for 20 minutes.

6Turn off the oven and leave the pie in the oven for 10 minutes.

7Let cool for 30 minutes on a rack before cutting.
