- 1 tbsp. flour
- 1 tbsp. cornmeal
- 4 eggs, unbeaten
- 1/4 cup milk
- 4 tbsp. lemon rind, grated
- 1/4 cup lemon juice
- 1 9-inch pie pastry
Directions

1Put sugar, flour, and cornmeal in large bowl; toss with fork. Add eggs, melted butter, milk, lemon rind, and lemon juice. Beat until blended. Pour into pastry shell. Bake at 375° for 35-45 minutes. No topping is necessary; cornmeal and lemon rind rise to top of pie during baking to form a crust.
