  • 2 c. sugar
  • 1 Tbsp. each: flour and cornmeal
  • 4 eggs (unbeaten)
  • 1/4 c. butter, melted
  • 1/4 c. milk
  • 4 Tbsp. grated lemon rind
  • 1/4 c. lemon juice
  • 1 large pie shell

Directions

    Put sugar, flour and cornmeal in a large bowl; toss lightly with a fork.

    Add eggs, butter, milk, lemon rind and lemon juice. Beat with electric mixer until smooth and thoroughly blended. Pour into large pie shell.

    Bake at 375° for 35 to 45 minutes, or until top is golden brown.
