- 2 whole eggs plus 4 yolks
- 1 c. white sugar
- 4 Tbsp. melted butter
- 1/2 c. heavy cream
- 1 Tbsp. yellow cornmeal
- 1 Tbsp. flour
- 4 Tbsp. lemon juice
- 1 Tbsp. grated lemon rind
- 1 (9-inch) unbaked pie crust
Directions

1Preheat oven to 350°.

2Beat eggs, yolks and sugar at high speed for 2 minutes.

3Add cornmeal, flour, lemon juice and rind. Mix well.

4Pour into pie crust and bake 30 minutes.

5Allow to cool to room temperature.
