  • 9 inch unbaked pie shell
  • 2 cups sugar
  • 1 Tbsp. all purposed flour
  • 1/4 tsp. salt
  • 1 Tbsp. cornmeal
  • 1/4 cup strained lemon juice
  • Grated rind of 2 lemons
  • 1/4 cup milk
  • 1/4 cup melted shortening
  • 4 eggs

Directions

    Mix sugar, flour, salt and cornmeal. Add lemon juice, grated rind, milk and melted shortening. Add eggs one at a time. Eggs should be room temperature. Carefully pour into pie shell and bake in pre-heated 350° oven for 50 minutes.
