  • 8 boned and skinned chicken breast halves
  • juice of 2 1/2 lemons
  • 2 Tbsp. margarine
  • 1 Tbsp. olive oil
  • 1 c. unbleached white flour
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 1/4 tsp. ground pepper
  • 2 Tbsp. grated lemon peel
  • 1/4 c. brown sugar
  • 2 Tbsp. fresh lemon juice plus 2 Tbsp. water
  • 1 to 2 lemons, sliced thin

Directions

    Place chicken in a bowl or casserole.

    Cover with lemon juice and marinate in refrigerator for several hours or overnight, turning chicken periodically.

    Preheat oven to 425° Put margarine and olive oil in a shallow baking pan and melt margarine.
