  • 1 Tbsp. cornstarch
  • 1 can chicken broth
  • 1 large carrot, sliced
  • 2 Tbsp. fresh lemon juice
  • 1/2 tsp. grated lemon peel
  • 1/2 tsp. salt
  • 3 Tbsp. chopped parsley
  • 1 1/2 c. dry Minute rice
