- 3 whole chicken breasts, boned, skinned and halved
- 1 1/2 c. unbleached flour
- 1/3 c. butter
- 2 Tbsp. olive oil
- salt and pepper
- 4 Tbsp. butter
- 4 Tbsp. finely chopped parsley
- juice of 1/2 lemon
Directions

1Wash and dry chicken breasts.

2Pound them flat with a mallet. Melt the butter and oil in a large skillet.

3Put the flour in a plastic bag and drop the breasts in to coat.

4Regulate the heat to moderately high and put chicken breast in skillet.

5Cook approximately 3 minutes on each side.

6When done, salt and pepper them and put them on an ovenproof dish and into a 250° oven to keep warm while you make the sauce.
