- 1 lb. boneless, skinless chicken breasts
- 1/2 c. flour, seasoned with salt and pepper to taste
- about 2 Tbsp. butter or margarine
- juice of 1 lemon
- 1 c. chicken broth
- hot, cooked rice
- lemon slices and parsley for garnish (optional)
Directions

1Pound chicken breasts to about 1/2-inch thick, using a meat mallet or the edge of a saucer.

2Coat flattened chicken breasts with flour, seasoned with salt and pepper to taste.

3Melt butter or margarine in a large skillet over medium-high heat.

4Add chicken breasts and brown quickly on both sides.

5Add lemon juice and chicken broth and bring to a boil, gently stirring the bottom of the pan to incorporate browned bits.
