- 1/3 c. lemon juice
- 1/4 c. reduced-sodium soy sauce
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/2 c. ground ginger
- 1/4 tsp. pepper
- 2 lb. skinned, boned chicken breast halves
- vegetable cooking spray
Directions

1Combine first 6 ingredients in a shallow container, stirring until well combined.

2Add chicken; cover and marinate in refrigerator 2 to 3 hours, turning once.

3Drain and discard marinade.

4Transfer chicken to rack of a shallow roasting pan, coated with cooking spray.

5Bake at 325° for 1 hour or until chicken is done.

6Cut into 2 ounce slices.

7Yields 14 servings at 1 slice each.
