  • 2 quartered chickens
  • 2 fresh lemons
  • 2/3 c. whole wheat flour
  • 1 Tbsp. salt
  • 1 tsp. paprika
  • 1/2 c. oil
  • 4 Tbsp. brown sugar
  • 2 c. chicken broth
  • 1 Tbsp. aromatic bitters or capers (optional)
  • 1 sliced lemon

Directions

    Wash and dry chicken pieces.

    Squeeze one fresh lemon over pieces.

    In plastic bag, combine flour, salt, paprika and add chicken pieces and shake.

    Brown pieces in oil.

    Combine brown sugar, broth and bitters.

    Put cooked rice in bottom of pan; top with chicken pieces and pour broth on top.

    Top with one sliced lemon.

    Bake 1 hour at 375°.
